Vitamin salad of celery, pear and hazelnuts: very tasty and healthy

Its preparation does not require much time or expensive ingredients, but the salad will look bright and very impressive on the festive table. This refreshing salad is packed with flavors, including pear, celery, raisins and cheese, reports The Modernproper.

Recipe

Ingredients:

  • 8 celery stalks (finely chopped);
  • 1 small fennel (finely chopped);
  • 1-2 pears (peeled and cored, cut into slices);
  • 150 g toasted, chopped hazelnuts and a little more for serving;
  • 100 g grated parmesan;
  • 100 g light raisins;
  • 2 tablespoons chopped fresh tarragon, chopped plus more to serve.

For refueling:

  • 1 ripe pear;
  • 2 tablespoons extra virgin olive oil;
  • 2 tablespoons unfiltered apple cider vinegar;
  • 1 tablespoon honey;
  • ½ teaspoon salt;
  • ¼ teaspoon freshly ground black pepper;
  • 1 tablespoon freshly squeezed lemon juice;
  • 1 tablespoon chopped fresh tarragon.

The indicated quantity of ingredients is designed for eight servings.

Preparation

  1. Prepare the dressing. In a blender bowl, blend one peeled pear, olive oil, apple cider vinegar, honey, salt, pepper and lemon juice until smooth. Add chopped tarragon.
  2. In a large bowl, combine celery, fennel, pears, hazelnuts, Parmesan, raisins and tarragon. Add dressing and stir.
  3. Divide the salad among plates. Sprinkle with fennel leaves, tarragon and hazelnuts and serve.
