  • dried rosemary – 1/3 tsp;
  • cloves – 2 buds;
  • coriander – 1/2 tsp;
  • chili pepper flakes – 1/2 tsp;
  • olive oil – 1 tbsp. l.;
  • salt, freshly ground pepper.

  2. Place sweet paprika, juniper, rosemary, cloves, coriander and chili pepper in a mortar and pestle. Add oil and stir.
  3. Make thin punctures in the meat and insert slices of garlic into them. Rub the meat with salt and brush with the spicy oil mixture on all sides. Wrap in cling film and leave at room temperature for a couple of hours to marinate.
  4. Preheat the oven to 200 degrees. Remove the film from the meat and wrap it in foil. Place on a baking sheet and bake for 1.5 hours. When the baked pork is almost ready, remove it from the oven, carefully unwrap the foil on top and brush the meat with a mixture of honey, mustard and olive oil in equal proportions. And bake for another 15 minutes to get a tasty crust.

You can also fry the meat in a very hot pan to seal all the juices inside.
