Eclairs are a French dessert that many people have loved since childhood. We invite you to remember their amazing taste and prepare this yummy choux pastry with filling according to the recipe of culinary blogger Christina Azizyan

Ingredients:

For the test:

  • water – 200 ml;
  • butter – 100 g;
  • flour – 200 gr;
  • large eggs – 5-6 pcs.

For the custard:

  • sugar – 1 glass;
  • egg – 1 pc;
  • flour – 1 tbsp. l;
  • milk – 200 ml;
  • butter – 100 g;
  • vanillin.

Cooking method:

  1. First we prepare the dough. Add oil to boiling water, bring to a boil, add flour and stir quickly until a homogeneous mass is formed. Remove from heat and add eggs one at a time, stirring constantly. You need 5 eggs, but if the dough is not very soft, you can add one more.
  2. Form eclairs on a baking sheet and place in the oven, preheated to 220 degrees, and bake until done. From the specified amount of ingredients, approximately 21-22 eclairs are obtained. They can be made smaller, like a profiterole, then the quantity will be larger. When they are browned, you need to turn off the oven and leave the eclairs to dry for another 3-4 minutes. Thanks to this, after they cool down, they will not settle and will retain their lush, beautiful shape.
  3. Now let’s prepare the cream. Beat the egg with sugar, add flour and pour heated milk into this mixture. Cook, stirring constantly until thickened. The cream should not be liquid. When bubbles begin to form, remove the cream from the heat, let cool and add soft butter and vanilla.
  4. Cut the side of the cooled eclairs and fill with cream. When serving, sprinkle with powdered sugar.
