That’s why today she suggests making a simple and delicious spinach soup.
Recipe
Ingredients:
- olive oil – 0.5 tsp.
- chopped onion – 1 pc.
- chopped spinach – 4 cups (1 cup – 220 ml)
- vegetable broth – 1 cup
- boiled beans – 0.5 cups
- salt – to taste
- ground black pepper – to taste
- curry powder – a pinch
- Parmesan cheese (or very hard cheese) – to taste
- dill – to taste
Cooking method:
- Heat oil in a medium saucepan over medium heat. Add chopped onion and simmer until tender.
- Add the spinach, cover the pan and simmer until the spinach is tender.
- Remove from heat and transfer to the bowl of a food processor. Add remaining ingredients. Grind until puree.
- Serve hot with Parmesan cheese.
