Spinach soup according to a nutritionist’s recipe

This dish is prepared very simply and quickly.

Nutritionist Svetlana Fus advises switching to healthy recipes – they are rich in vitamins and delight with bright colors and flavor combinations. And cooking them is a pleasure!

That’s why today she suggests making a simple and delicious spinach soup.

Recipe

Ingredients:

  • olive oil – 0.5 tsp.
  • chopped onion – 1 pc.
  • chopped spinach – 4 cups (1 cup – 220 ml)
  • vegetable broth – 1 cup
  • boiled beans – 0.5 cups
  • salt – to taste
  • ground black pepper – to taste
  • curry powder – a pinch
  • Parmesan cheese (or very hard cheese) – to taste
  • dill – to taste

Cooking method:

  1. Heat oil in a medium saucepan over medium heat. Add chopped onion and simmer until tender.
  2. Add the spinach, cover the pan and simmer until the spinach is tender.
  3. Remove from heat and transfer to the bowl of a food processor. Add remaining ingredients. Grind until puree.
  4. Serve hot with Parmesan cheese.
