“Shana tova u-metuka!”: Jewish New Year’s cake Leikakh

Jewish New Year’s Leikah is very easy and quick to prepare.

The Jewish New Year is called Rosh Hashanah and is celebrated in the fall. Traditionally, on the day of the holiday, honey pie – leikakh – is served on the table, and people wish each other “Shana tova umetuka!” – have a good and sweet year. Recipes for leukakh differ in different Jewish communities, but they have one thing in common – they are very tasty honey baked goods, which are not forbidden to bake on other days. Recipe

Ingredients:

For the test:

  • large eggs – 2 pcs.;
  • honey – 115 g;
  • sugar – 50 g;
  • vegetable oil – 35 g;
  • soda – 5 g (incomplete teaspoon);
  • flour – 95 g;
  • strong coffee – 50 ml;
  • spices (cinnamon, cloves, ginger, cardamom, nutmeg) – optional.

For decoration:

  • coffee beans;
  • chocolate.

Preparation:

  1. Brew very strong coffee and let it cool.
  2. Sift the flour along with the spices.
  3. In another bowl, beat eggs with sugar and honey. Add baking soda, vegetable oil and coffee, continue whisking until smooth.
  4. Add the flour and spices and mix with a mixer at low speed until no lumps of flour remain.
  5. Preheat the oven to 160°C. Prepare the baking dish: line it with foil or baking paper.
  6. Pour the batter into the mold. Bake the watering cans for about 40 minutes. Check the readiness of the pie with a wooden skewer: it should come out dry. If the cake is very browned and still raw in the middle, cover its surface with foil, matte side down.
  7. Remove the finished cake from the pan along with the foil and cool on a wire rack. After this, place on a plate and garnish with chocolate and coffee beans.
