Ramen – noodle soup – is very popular in Korea and Japan. But it’s easy to prepare and doesn’t require any complicated ingredients.
Our grilled chicken ramen recipe doesn’t require fancy ingredients. You can use pre-cooked store-bought chicken or leftover chicken from a picnic. The soup is aromatic, satisfying, and, most importantly, it is very easy to prepare.

Ingredients
- 1 tablespoon olive oil
- 7-9 medium sized mushrooms, chopped
- salt and freshly ground black pepper
- 3 eggs
- 4 cups chicken broth
- 2 cups beef broth
- 2 tablespoons soy sauce
- 500 g ramen noodles
- 500g shredded grilled chicken, store bought
- 1 bunch green onions, thinly sliced
- garlic chili sauce to taste
Preparation
- Heat oil over medium heat. Add the mushrooms and cook until well browned, 6 to 8 minutes. Season with salt and pepper.
- Fill the eggs with water. Bring to a boil over medium heat. Once the water boils, remove the pan from the heat and cover with a lid. Let stand 8 minutes. Wash the eggs under cool water and peel them.
- Mix chicken broth with beef broth and soy sauce. Bring to a boil over medium heat.
- Add noodles to broth and cook until tender, 4 to 6 minutes.
- To serve, divide the ramen and broth among six bowls. Top with mushrooms, shredded chicken, chopped green onions and chili garlic sauce to taste.
- Cut the peeled eggs in half and place one half in each bowl. Serve immediately.
