Pumpkin Cinnamon Pancakes

Ingredients:

  • eggs – 3 pcs;
  • sugar – 60 g;
  • salt – a pinch;
  • flour – 150 gr;
  • baking powder – 1 tsp;
  • butter – 30 g;
  • milk – 300 ml;
  • ground cinnamon – 1 tsp;
  • pumpkin puree – 200 gr.

Cooking method:

  1. Bake the pumpkin for puree in the oven. Prepared in this way, it turns out less liquid.
  2. Mash the finished pumpkin with a fork and place the resulting mass in a deep bowl or mixer bowl. Add eggs, salt and sugar there, beat with a whisk until smooth. Next, add cinnamon and melted butter and stir. Add baking powder into the flour, mix and sift everything into the total mass. Stir until smooth.
  3. At the end of preparing the dough, pour hot milk into the bowl with the mixed ingredients and mix well again so that there are no lumps.
  4. Leave the dough for 15-30 minutes, then fry the pancakes in a heated frying pan on both sides until cooked. For the first pancake, be sure to grease the pan with vegetable oil.
