Pancake cake with delicate cream: how to prepare a delicious dessert

If you love pancakes, then try making this simple and original cake.

A cake made from thin pancakes is much easier to prepare than a more traditional cake with layers that need to be baked in the oven. Pancakes are complemented with delicate cream and fresh berries and fruits.

This pancake cake can be prepared all year round, with the occasional addition of seasonal fruits. The recipe was shared on the culinary website Cucchiaio.

Pancake cake

Ingredients:

For pancakes:

  • 6 eggs;
  • 120 g flour;
  • 50 g melted butter;
  • 40 g granulated sugar;
  • 200 g milk;
  • a pinch of salt.

For filling:

  • 300 g skim milk;
  • 1 egg yolk;
  • 50 g cream;
  • 110 g sugar;
  • 25 g corn starch (or rice);
  • vanilla.

For decoration:

  • fresh berries and fruits.

Preparation:

  1. In a bowl, mix flour, milk, salt, sugar. Stirring constantly, add the eggs and mix well until you get a liquid and silky mixture. Finally, pour in the melted butter and let the pancake batter sit at room temperature for about 10 minutes.
  2. Grease a 15 cm diameter pan with butter and bake the pancakes, pouring the batter into the pan with a ladle. Try not to dry out the pancakes. Continue until you run out of batter, stacking one pancake on top of another on the plate.
  3. Heat the cream and 250 grams of milk along with the vanilla pod (which you then remove).
  4. Mix the sugar with the egg yolk, cornstarch and remaining 50 grams of milk in a bowl until all ingredients are well combined. Then pour this cream into a saucepan with the already hot cream and milk.
  5. Simmer over low heat until the mixture becomes thick. Remove from heat, pour the cream into a large low container, cover with cling film and let cool completely in the refrigerator.
  6. Then remove the cream from the refrigerator and stir it with a spoon. Assemble the cake, coating the pancakes with cream until the pancakes or cream run out.
  7. Brush the last pancake with cream and top with strawberries, blackberries, blueberries and pineapple slices. Or any other fruits and berries you have. You can use fruit in syrup, such as peaches.
