Noodles with omelette and green onions

We all really like recipes that use the simplest ingredients, and the result is both original and tasty. Noodles with omelet also belong to such recipes. Ideal for breakfast and lunch.

Recipe

Ingredients:

  • egg noodles – 200 g
  • eggs – 3 pcs.
  • green onion or chives – 1 bunch
  • raw sesame seeds – 2 tbsp. l.
  • soy sauce – 2 tbsp. l.
  • balsamic or wine vinegar – 1 tsp.
  • vegetable oil – 2 tbsp.
  • dark sesame oil
  • salt, pepper – to taste

Cooking method:

  1. Cook noodles in plenty of boiling salted water according to package instructions. Drain in a colander, rinse with cold water and let the noodles dry.
  2. Beat eggs with 2 tbsp. l. water at room temperature, soy sauce and wine vinegar.
  3. Grease a large non-stick frying pan with vegetable oil and pour in the egg mixture. Fry a thin omelette – the eggs should be completely set.
  4. Transfer the omelette to a board and let it cool slightly. Cut the omelette into three parts, then cut into thin strips.
  5. Slice the onion as thinly as possible.
  6. Heat 1 tbsp in a wok (or the same frying pan where the omelette was fried). l. vegetable oil.
  7. Add all the green onions, 1 tbsp. l. sesame seeds, add a little salt and fry for 1 minute.
  8. Add noodles and omelette, season with pepper, drizzle with sesame oil, heat for 1-2 minutes and sprinkle with remaining sesame seeds and serve immediately.
