New Year’s menu: simple cod liver salad with pickled cucumbers

This salad can easily replace the main course, because the potatoes make it very filling.

Many people prepare it for the holidays. This simple and inexpensive salad can be prepared for the New Year or for any celebration. Folded in bright layers, it will decorate your holiday table, reports 1000.menu.

Ingredients

To prepare 8 servings you need the following ingredients:

  • potatoes – 2-3 pcs. (medium size);
  • carrots – 2-3 pcs. (medium size);
  • eggs – 285 g (4-5 pcs.);
  • green onions – 20 g;
  • pickled cucumbers – 130 g;
  • mayonnaise – 80 g (or to taste).

Preparation

  1. Boil the potatoes and carrots and cool completely. Peel the vegetables and grate them on a coarse grater into different dishes.
  2. Remove the cod liver from the jar and place on a paper towel to drain excess oil. Mash the liver with a fork into smaller pieces.
  3. Hard-boil the eggs and cool. Divide the cooled eggs into whites and yolks. Grate the whites on a coarse grater.
  4. Cut the pickled cucumbers into thin strips. If desired, you can also chop them on a coarse grater.
  5. It is better to collect the salad in a culinary ring. Place grated potatoes on the bottom and smooth out well. Apply a small layer of mayonnaise. Next, lay out the cod liver (this layer does not need to be greased).
  6. Finely chop the green onions and sprinkle on a layer of liver. Then lay out the pickled cucumbers, smooth them out and brush with mayonnaise. Place grated carrots, smooth, apply mayonnaise.
  7. Cover the carrot layer with grated egg whites and brush with mayonnaise. Finish the salad with egg yolks, grate them on top. Place the dish in the refrigerator for several hours. Before serving, decorate the salad with herbs and carrot “roses”.
