Langosh: a recipe for a delicious and simple dish of Transcarpathian cuisine

Langos is a flatbread fried in oil and served with cheese.

If you like to try something new but simple, then try making langos. This is a flatbread fried in oil, popular in Hungary, the Czech Republic and the western regions of Ukraine. It is often prepared at fairs and street celebrations, so it can easily be called folk street food. The recipe for the dish was shared by a Ukrainian culinary blogger who writes under the nickname BrahmanDen.

Langos

Ingredients:

  • 330 g flour;
  • 100 ml milk;
  • 150 ml water;
  • 4 g dry yeast;
  • 1 tsp. salt;
  • 1 tsp. Sahara;
  • 200 ml sour cream or 50 ml vegetable oil;
  • 2 cloves of garlic;
  • 300 g cheese
  • vegetable oil for frying.

Recipe

  1. You can take one type of cheese or several. You can use ordinary hard cheese. Gouda, Hollandaise and Grana Padano go well together.
  2. Before cooking, peel and chop the garlic. Add it to sour cream or butter. Season with salt. Mix well and place in the refrigerator. We will need the sauce for the finished flatbreads.
  3. Rinse the bowl with hot water, wipe dry and pour in warm milk. It’s warm, not hot.
  4. Add sugar and salt. Stir. Add the yeast directly to the flour and sift into the milk. Add warm water little by little along with the flour. Knead with a spoon or spatula.
  5. The dough will be sticky, but do not add more flour, otherwise it will not taste good.
  6. Grease a bowl with vegetable oil, place the dough in it, cover with a towel and leave for an hour. During this time the dough will double in size.
  7. Heat the vegetable oil well in a large frying pan. Focus on the first light smoke. After this, set the temperature slightly higher than the minimum. This will work for a cast iron skillet.
  8. Before frying, grate all the cheese and place sour cream or butter with garlic next to it.
  9. Grease your hands with vegetable oil, pinch off a piece of dough 6-7 centimeters in size, stretch it in your hands, trying not to tear it.
  10. Fry the tortillas for 3 minutes on each side. But it may take less time.
  11. Lift the edge of the cake slightly and look at the color. He should be confidently rosy.
  12. Place the finished tortillas on paper towels to absorb excess oil. Immediately brush the flatbread with sour cream and garlic and place the cheese on top.

It is better to eat lángos hot, washed down with kefir or tomato juice.
