How to cook Strachetti: a recipe for a delicious Italian beef dish

Stracetti is cooked quickly and at high temperature. Add the meat slices to the pan only when it is hot and cook for a couple of minutes on each side, no more. This will create a nice crust, the meat juice will not be lost, and the slices will remain very soft.

Stracetti: beef slices with tomatoes and olives

Ingredients:

  • 600 g pieces of beef;
  • 400 g tomato pulp;
  • pitted olives;
  • red wine;
  • 2 cloves of garlic;
  • 2 tablespoons chopped parsley;
  • flour, olive oil, salt, pepper.

Preparation:

  1. To make strachetti, cut a piece of beef into thin slices and dredge in flour, shaking off any excess.
  2. Heat three tablespoons of oil in a large frying pan, add the beef slices and fry them for 2 minutes on both sides. Add the wine, let it evaporate, and then remove the meat from the pan.
  3. In the same frying pan, place the chopped garlic, tomato pulp or tomato puree, a pinch of salt and freshly ground pepper and continue to cook over medium-low heat, covered, for about 15 minutes. At this point, put the beef slices back and remove the garlic.
  4. Also add the olives and chopped parsley and continue cooking for another five minutes, turning the slices after two. Turn off the heat and serve the strachetti.
