Honeysuckle in cooking: recipes and ways to use berries

The presence of antioxidants in honeysuckle berries suggests that eating them helps strengthen the immune system and remove toxins from the blood. Consuming honeysuckle has a positive effect on the body’s defense against various infections and can even improve vision.

Research by scientists suggests that honeysuckle berries have antimicrobial properties, which help the body fight bacteria and fungi. In addition, vitamin K, which fruits are rich in, is necessary to increase cell protection from damage and can prevent aging.

Main culinary uses of honeysuckle fruit

The harvest in most regions of Ukraine is harvested in late June–early July, which coincides with the ripening time of early apples and pears. Only ripe berries are selected for jam. According to recipes, jam can be prepared with varying amounts of sugar. It is best to use fruits of large-fruited varieties, because then there will be little skin in the confiture, and the delicacy will be tender.

Preparations in the form of compotes can be very different. Some housewives prefer to prepare ready-made vitamin drinks with plenty of water for the winter, while others try to prepare concentrated formulations from which they can then quickly cook a rich and aromatic compote. Very often, apples and pears are placed in preparations for compotes along with honeysuckle.

Honeysuckle pastille has a pleasant sour taste. When preparing the dessert mass, large-fruited berries of large-fruited varieties are used, manually pureed to a puree.

Garden honeysuckle fruits can also be dried and frozen. The drying process begins with selection. The prepared fruits are washed and placed on dehydrator trays or on special grids for ovens with a convection function. You can freeze honeysuckle whole berries or in molds, turning them into puree. Frozen fruits or puree will preserve the taste and composition of fresh honeysuckle – the mass can be used to prepare vitamin tea or as an additive to baby porridge.
