Honey “Nikolaychiki”: how to prepare traditional cookies for the holiday

This recipe will not only delight you with its taste and festive aroma, but can be great fun for the whole family.

It has long been customary on the eve of St. Nicholas Day, which this year is celebrated on December 6, to bake honey “Nicholas” and place it under children’s pillows. Traditional forms for them are figurines of a saint, horses and cockerels, but any molds can be used.

After all, the main thing in this dish is the incredible aroma of honey and spices, which creates a festive mood. The taste of the cookies is very delicate, even kids can be treated to them. The proven recipe was shared by the website Shuba.life.

Ingredients:

For the test:

  • wheat flour – 600 g;
  • eggs – 2 pcs + 2 yolks;
  • margarine (can be replaced with butter) – 150 g;
  • sugar – 200 g;
  • honey – 150 g;
  • sour cream 20% – 2 tbsp;
  • baking soda – 1 tsp;
  • ground cinnamon – 0.5 tsp;
  • ground cloves – 0.5 tsp.

For the glaze:

  • powdered sugar – 1 tbsp;
  • egg (white) – 1 piece;
  • lemon juice – 0.5 tsp.

Preparation:

  1. Sift flour with baking soda and grate margarine or butter. Add to the well-mixed mixture: eggs; yolks; sour cream; sugar; honey; spices.
  2. Knead the dough and wrap it in film. The dough should rest in the refrigerator for at least 6 hours.
  3. Roll out the dough not too thin – it should not be thinner than 0.5 cm. Cut out “Nikolaychik” figures from the rolled out dough using molds.
  4. Line a baking sheet with a silicone mat or baking paper and place the cookies on it. Brush each piece with beaten egg using a silicone brush. Bake the “Nikolaychiks” in an oven preheated to 180 °C until they turn golden brown.
  5. Prepare the sugar glaze (icing): Beat the egg whites until stiff peaks form. Mix in the powdered sugar in several stages. Add lemon juice.
  6. Decorate cooled cookies with icing using a piping bag.
  7. Let the glaze dry completely for at least 2 hours.
