Airy nut cookies – a recipe made with squirrels

Ingredients:

  • 70 grams of protein (from 2 large eggs);
  • 180-200 grams of sugar;
  • 210 grams of nuts.

Preparation:

  1. In order for the cookies to turn out exactly as in the recipe, it is important to follow the rules – peel the nuts, take out the eggs in advance so that the whites are at room temperature, and do not replace sugar with powdered sugar.
  2. When all this is done, grind the nuts into fine crumbs. If you use almonds, you must first pour boiling water over them, leave them to soak, and then peel and dry them in the oven at 50 degrees, and only then chop them.
  3. Beat the whites until light foam appears on the third speed of the blender, and then on the fifth until fluffy. Continuing to beat, add sugar in small portions, achieving sharp peaks of the whites. Pour the nuts into the same container and mix gently.
  4. Apply 4 drops of protein mass around the perimeter of the baking sheet, glue parchment greased with oil onto it. Transfer the egg white mixture into a pastry bag and pipe the cookies onto a baking sheet. The distance between the cookies should be at least 2-3 cm. Bake for 20-25 minutes at 180 degrees.
