Breaded fried chicken

Ingredients:

  • 1 medium sized chicken;
  • 4 eggs;
  • 4 tablespoons grated Parmesan;
  • flour;
  • breadcrumbs;
  • cornflakes;
  • juice of one lemon;
  • 1 clove of garlic;
  • parsley;
  • basil;
  • 1 liter of vegetable oil;
  • salt pepper.

For the sauce:

  • 3 tablespoons of yogurt;
  • 2 tablespoons of mayonnaise;
  • 1 clove of garlic;
  • juice of half a lemon
  • salt pepper.

Preparation:

  1. To make fried chicken, you must first cut the chicken into pieces. Peel, remove bones and cut into smaller pieces. Place them in a bowl.
  2. Season the chicken with lemon juice, chopped parsley, chopped garlic and a spoonful of Parmesan. Also add salt and pepper and mix well. Cover with cling film and leave in the refrigerator for 1 hour.
  3. Next, remove the chicken from the refrigerator, coarsely crumble the corn flakes into the baking dish and add the breadcrumbs. In a bowl, beat the eggs with salt, pepper, a few chopped basil leaves and the remaining grated cheese.
  4. At this point, take the chicken, drain the marinade and place the pieces in a bowl with flour.
  5. Shake off any excess flour and dip the chicken pieces into the beaten egg and then into the cornflake/breadcrumb mixture. Heat the oil in a saucepan with a diameter of about 20 cm to a temperature of 70°. Fry a few pieces of chicken at a time, turning them so they are well cooked on all sides. This will take 7-10 minutes. Remove the chicken with a slotted spoon and place them on a sheet of absorbent paper.
  6. Prepare the sauce: Mix yogurt, mayonnaise, lemon juice and chopped garlic in a bowl. Season with salt and pepper and stir well until you get a smooth sauce. Serve the fried chicken while still hot with the yogurt sauce.
