According to Chrissy, carrots cooked this way caramelize, which is due to the natural sugars they contain. Before cooking, make sure all the carrots are basically the same size (cut them lengthwise if you need to) and they’ll turn into something delicious and light. If you can find colorful carrots, cool.

Recipe

Ingredients:

  • thin carrots, peeled (the top is cut off, but the tail with greens is left)
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • pepper – teaspoon
  • 6 sprigs thyme

Preparation:

  1. Preheat the oven to 200°C. Cut thick carrots in half, leave thin ones whole. Line a large baking sheet with foil, place the carrots on it, then drizzle with olive oil and sprinkle with salt and pepper.
  2. Toss everything until the oil, salt and pepper coat the carrots on all sides. Scatter the thyme sprigs among the carrots and roast until the undersides are golden and caramelized, about 30 to 35 minutes.
  3. Then shake the pan and continue to cook until it is soft and can be easily pierced with a fork. Remove from the oven, discard the thyme sprigs and serve.
