Bruschetta is an Italian appetizer that is traditionally served before main courses.
This bruschetta recipe uses a wonderful base of toasted bread and olive oil, along with fresh cherry tomatoes, some avocado and seasoning, reports The Modernproper.

Ingredients
- 1 baguette, cut diagonally into 2.5 cm thick slices;
- ¼ cup extra virgin olive oil;
- 1 teaspoon garlic powder;
- 600 g cherry tomatoes, halved and seeded;
- 1 tablespoon white balsamic vinegar;
- 3 cloves garlic, minced;
- 2 avocados;
- 1 teaspoon lemon juice;
- ¼ cup fresh chopped basil;
- ½ teaspoon sea salt;
- ¼ teaspoon ground black pepper.
Preparation
- Preheat the oven to 200°C. Brush one side of each bread slice with olive oil and sprinkle with garlic powder. Place slices, oiled side up, on a rimmed baking sheet. Fry until golden brown, 3-4 minutes.
- In a small bowl, combine the olive oil with the tomatoes, balsamic vinegar and half the minced garlic. Set aside to allow flavors to meld.
- In a medium bowl, mash the avocado. Add lemon juice, remaining garlic, half the basil, salt and pepper.
- Spread each slice of toasted baguette with 1 to 2 tablespoons of the avocado mixture. Distribute the tomatoes evenly on top. When serving, sprinkle with remaining basil and salt.
