Blueberry and Nut Butter Muffins

You can use both fresh and frozen berries in this recipe. If you don’t have blueberries, try other berries.

Recipe

Ingredients:

  • 1 cup flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • a pinch of salt
  • ½ teaspoon cinnamon
  • ⅓ cup sugar (or other sweetener)
  • ½ cup plant milk
  • 3 tablespoons peanut butter
  • 1 teaspoon vanilla
  • 1 medium banana
  • ½ cup blueberries

Cooking method:

  1. Sift the flour, add baking powder, soda, salt, sugar, vanilla, cinnamon.
  2. Separately mix plant milk, peanut butter and banana puree.
  3. Mix dry and wet ingredients. Add blueberries.
  4. Grease the cupcake pans with oil.
  5. Do not fill the forms 100% with dough. The cupcakes will rise slightly while baking.
  6. Bake at 180 degrees for 25 minutes or until lightly browned.
